This back-to-school season, treat your little ones to these delicious oatmeal cookies with chocolate chips that they will love. They are very soft and also rich in fiber. A delight for your little ones' palate.
In a bowl, mix the flour with the baking soda, cinnamon, and salt. Set aside.
Cream the butter with the brown sugar and the refined sugar. Add the vanilla and the egg and beat for a few minutes. Add the oats and beat until combined.
Gradually add the dry ingredients and finally the chocolate chips, being careful not to overmix.
Shape into balls by hand and place on a baking sheet. Refrigerate for about 20 to 25 minutes.
Bake for 12 to 14 minutes or until the edges are golden. Cool and enjoy.
