  • 6 egg whites
  • 1/4 cups sugar
  • 6 egg yolks
  • 1/4 cups sugar
  • 2 tablespoons orange zest
  • 1 cup flour
  • 3 tablespoons unsalted butter , melted
  • 1 teaspoon vanilla essence
  • 2 cups whipped cream, for the filling
  • 1 cup orange marmalade , for the filling
  • 1 1/2 cups icing sugar, for decoration
  • 1/2 cups evaporated milk, for decoration
  • 2 tablespoons orange zest, for decoration

  • Beat the egg whites with the sugar until they double in size. Set aside.
  • Beat the yolks and sugar until pale in color. Set aside.
  • Gently fold the egg whites into the yolks. Sift the flour over the whites and yolks mixture and fold gently until combined. Finally, add the vanilla essence and the melted butter, integrate perfectly and place on a tray with parchment paper. Bake at 180°C for 11 minutes.
  • Sprinkle some powdered sugar over a dry, clean cloth. Flip the sponge cake as soon as it comes out of the oven and carefully remove the parchment paper. Roll it up and let it cool for 40 minutes.
  • Fill the Swiss roll with whipped cream and orange marmalade. Roll it up.
  • Mix the powdered sugar, evaporated milk, and orange zest until combined. Drizzle over the Swiss roll and decorate with orange slices.
