Beat the butter together with the sugar in a bowl until you obtain a creamy mixture, using a handheld mixer on medium speed. Then add the eggs one by one and continue beating until incorporated.
Add the pancake flour, orange zest, orange juice, and sour cream, and finish incorporating with the help of a silicone spatula in a folding manner until you obtain a homogeneous and slightly thick mixture.
