Orange Pound Cake with Pancake Flour

  • 2 cups pancake mix, sifted
  • orange zest
  • 1 cup orange juice, natural, seedless
  • 1/2 cups sour cream
  • orange, in segments, for decoration

  • Preheat the oven to 170 °C.
  • Beat the butter together with the sugar in a bowl until you obtain a creamy mixture, using a handheld mixer on medium speed. Then add the eggs one by one and continue beating until incorporated.
  • Add the pancake flour, orange zest, orange juice, and sour cream, and finish incorporating with the help of a silicone spatula in a folding manner until you obtain a homogeneous and slightly thick mixture.
  • Pour the mixture into a previously greased loaf pan. Bake for 40 minutes at 170 °C or until, when piercing the center of the pound cake with a wooden skewer, it comes out clean.
  • Remove the orange pound cake from the oven, unmold, and cool. Decorate with orange segments and powdered sugar.
