In a pot, heat the water with the sugar for 5 minutes until the sugar dissolves.
In a bowl, mix the syrup with the mezcal, gelatin, and orange juice.
Place a bowl with ice and on top of it, the bowl with the ice cream, mix with a whisk for 20 minutes until the ice cream solidifies. Place in the freezer for 1 hour.
Serve in a small glass and garnish with worm salt.
