Cover the outside of the mold with aluminum foil to prevent water from getting into the cheesecake.
Preheat your oven to 180° C.
Place the cookies in a food processor. Once the cookies are crushed, stir in the other ingredients. Place the mixture at the bottom of the molds and press it down with a bean masher.
Cut the cream cheese and beat it for 4 minutes or until smooth. Gradually add the sugar, salt, and vanilla; beat for another 4 minutes. Without stopping the mixer, add the eggs (one at a time), cream, and whipped cream.
Pour the filling into the mold. Place the mold in the oven in a water bath. Find a shallow baking tray, place the mold inside, and pour water into the tray. Bake at 160° C for one and a half hours.

Pour the raspberries, sugar, and water into a saucepan over low heat. Mash the fruit with a bean masher. Heat for 5 minutes, stirring constantly.
Remove the cheesecake from the refrigerator, pour the cream you prepared on top, and add the raspberry sauce.
