Palanqueta

Palanquetas are a typical Mexican sweet that are usually made with peanuts, although they can be varied and made with pistachios or even pumpkin seeds.

  • 100 milliliters water
  • 2 tablespoons glucose syrup
  • 450 grams sugar
  • 15 grams margarine
  • 100 grams toasted peanuts
  • 1 teaspoon baking soda

  • Prepare a greased baking tray.
  • In a saucepan, put the water, sugar, glucose, and stir constantly until the sugar has completely dissolved.
  • Boil until the mixture reaches 150ºC.
  • When it reaches that temperature, turn off the heat and add the butter, peanuts, and baking soda. Mix well.
  • Pour into the baking tray and spread it out to make it look even.
  • Let it cool and once cooled, cut into pieces.
