Preheat the oven to 220 degrees Celsius (425 F). Grease a baking tray with butter.
Mix the sugar and cinnamon in a bowl and sprinkle this mixture on the work surface. With the dough, roll out a rectangle 5mm (1/4 inch) thick and sprinkle with the sugar and cinnamon mixture.
Fold the short sides 3 times toward the center, sprinkle with more sugar and cinnamon, and fold in half as if closing a book.
Cut vertical slices of 1cm (1/2 inch) and place them on the prepared tray. Lightly flatten with a rolling pin and sprinkle with more sugar.
Bake for 10 minutes, flip the palmier cookies, and bake for another 10 minutes until golden. Cool on a wire rack.
