Put the peaches with water in a pot and let them boil. Reduce the temperature to low and let cook for 5-8 minutes, until the peaches become soft.
Blend the coconut milk, sugar, and vanilla extract in a blender. Add the peaches and process until it is a smooth mixture. Cover the blender jar and refrigerate for at least 3 hours.
After three hours, place in an ice cream maker and prepare your peach ice cream.
