Peanut Palanqueta

Peanut palanqueta is a typical dish from Coahuila, Mexico. The recipe is very delicious and much easier than you think.

  • 2 cups toasted peanuts
  • 1 cup sugar
  • 1 cup piloncillo
  • 2 sticks butter

  • Grease a rectangular pyrex dish with butter.
  • In a medium saucepan, melt 4 tablespoons of butter and add the cup of sugar and the cup of piloncillo, stirring constantly until it changes to a golden color and has a thick consistency.
  • Add the peanuts to the caramel in the saucepan and stir well until everything is well incorporated.
  • Pour the mixture into the dish and flatten with a damp wooden rolling pin until smooth. Let cool.
  • Once cooled, unmold and cut into pieces.
