Pear Clafouti
Deborah Dana
Clafouti is a classic French dessert, easy to prepare. It consists of baking fruit (cherries, pears, grapes, peaches, or whatever you like) in a liquid batter. It turns out to be a delicious moist cake.

Preheat the oven to 200 degrees.
Grease and flour a large baking dish. Wash the pears, peel them, and slice them very thinly.
In a bowl, mix the flour and sugar. Stir well.
In another small bowl, mix the eggs, cream, and vanilla extract. Stir.
In the bowl with the flour, make a well in the center and slowly add the egg mixture until you have a smooth batter.
Let it rest for about 15 minutes. Pour the mixture over the pears and bake for 25 to 30 minutes until golden brown.
Before serving, sprinkle with powdered sugar. Serve warm.
You can also make them in individual ramekins like soufflés.
