This is a sweet and perfect ending to a Christmas dinner, combining some of the scents that remind everyone of this season, and of course, it doesn't forget the incredible flavor. You can't miss preparing this delicious recipe.
Sift the flour and the 6 tablespoons of sugar, then add the cold butter in cubes and begin to crumble it with the flour using your hands. Gradually add the cold water, mixing until a ball forms, and place it in the refrigerator to chill.
Peel the 4 apples, cut them in half, remove the core, slice them, and set them aside with a little lemon juice to prevent oxidation.
Take the dough out of the refrigerator, divide it into two parts, roll the first part out to a thickness of half a centimeter, place it in the mold, and prick the entire base with a fork. Roll out the second part of the dough to the same thickness, then cut the edges to form a square, and slice it into strips one and a half centimeters wide.
Preheat the oven to 375°F for 15 minutes. For the toffee, place the sugar in a saucepan and sprinkle it with a few drops of water. Heat it until the sugar gradually crystallizes, melts, and takes on color. Keep an eye on it to prevent burning.
While the caramel is slowly cooking, heat the liquid whipping cream in the microwave so that it is as hot as possible, thus avoiding a large temperature contrast when mixing it with the caramel.
Stirring occasionally for even cooking, we will obtain a caramel that starts light and then becomes darker. Once a sufficiently golden color is reached, remove the saucepan from the heat. In two or three additions, and very carefully, add the whipping cream and stir to mix well.
Once all the cream is incorporated, stir and return the saucepan to the heat to achieve a homogeneous texture and regain its color. When it reaches your desired taste, turn off the heat.
Place the apples in the base, then add the toffee on top, lay the strips of dough over it, and start to cross them. Sprinkle sugar over the dough and place the pie in the oven for half an hour or until the dough looks golden.
