Sift 2 cups of flour with salt 3 times, add the shortening and mix with your fingers until it resembles coarse sand. Gradually add cold water by the tablespoon until a manageable dough forms. Roll it out and cover a pie dish, piercing the bottom and sides with a fork. Set aside.
Wash the apples, peel them, remove the core, and slice them thinly. Mix with one cup of sugar and place over the pie crust. Then, whisk the half cream, eggs, and liquid cream until well combined and pour it over the apples in the pie crust.
For the topping:
In a bowl, combine 1 cup of flour, 1/2 cup of sugar, softened butter, vanilla, and cinnamon. Mix with a fork until a smooth and manageable paste forms. Place it between two sheets of plastic and roll it out to the appropriate size to cover the dish. Lay it over the apples (without the plastic) and bake at 180°C for about 1 hour or until a toothpick inserted in the center comes out clean.
