Beat the egg and water in a deep bowl with a whisk.
In another deep bowl, mix the sugar, flour, and cinnamon. Add the apples and raisins and mix well.
Place the puff pastry on a lightly floured clean surface. With a rolling pin, roll out the puff pastry into a rectangle of approx. 30 x 24 cm.
Place the short side of the puff pastry towards you and with a spoon, place the apple filling in the lower half of the pastry, leaving a 2 cm border at the bottom without filling.
Roll the pastry starting from the side closest to you and place it on a baking sheet with the seam side down to prevent it from opening while baking.
Seal the sides with your fingers and with a pastry brush, paint the pastry with the egg and water mixture.
With a knife, you can create small diagonal slashes on the top, without cutting into the filling.
Bake the pastry for 35 minutes or until lightly golden. Remove from the oven and allow it to cool for 20 minutes.
