Baked Pumpkin Pie

  • 180 grams sugar
  • 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoons ginger
  • 1/4 teaspoons nutmeg
  • 2 eggs
  • 1 can evaporated milk
  • 100 milliliters whipping cream
  • 500 grams pumpkin purée, from Castilla
  • 1 pie crust

  • Cut the pumpkin and remove the filling.
  • In a pot, add the pumpkin with water and boil.
  • Drain the pumpkin and blend it with a little water.
  • Peel and grate the ginger, set aside.
  • Add the evaporated milk, sugar, salt, cinnamon, nutmeg, grated ginger, and eggs to the blender. Blend until a homogeneous mixture forms.
  • Pour the mixture into the pie crust.
  • Bake for one hour, remove and decorate.
