Baked Cheesecake

  • 1 3/4 cups flour, for the crust (220g)
  • 1/2 cups icing sugar, for the crust
  • 1/2 tablespoons salt, for the crust
  • 1/2 tablespoons baking powder, for the crust
  • 1 egg, for the crust
  • 2 tablespoons vanilla essence, for the crust
  • 1/2 cups butter, fried and diced, for the crust (100g)
  • 3 cups requesón, for the filling
  • 1 1/2 cups Greek yogurt, for the filling
  • 1 cup condensed milk, for the filling
  • 3 eggs, for the filling
  • 1/2 cups flour, for the filling
  • 3 tablespoons vanilla essence, for the filling
  • 1 cup whipped cream, for decoration
  • 1 cup strawberries, for decoration

  • Preheat the oven to 180° C.
  • In a bowl, mix the flour with the powdered sugar, salt, baking powder, egg, vanilla extract, and butter until you have a crumbly dough. Wrap in cling film and refrigerate for 20 minutes.
  • For the filling, beat the ricotta with the yogurt, condensed milk, egg, flour, and vanilla extract.
  • On a floured surface, roll out the crumbly dough to the diameter of the baking dish. Roll it onto the rolling pin and cover the baking dish, trimming off the excess dough. Freeze for 15 minutes.
  • Pour the filling and bake for 45 minutes or until cooked.
  • Let cool and decorate with cream and strawberries.
