Cheese Pie and Strawberry Gelatin

This surprising dessert was made by my mom for one of my birthdays, when I didn't want cake. It really surprised me because it was a dessert we didn't expect, but we all loved it; I hope you like it as much as we do. It is a creamy cheesecake with a delicious and tangy strawberry gelatin that you won't be able to stop eating.

  • 2 packages cookies, tipo María
  • 1 1/2 sticks unsalted butter
  • 1 can condensed milk
  • 1 can table cream
  • 5 eggs
  • 1 package cream cheese
  • 1 teaspoon liquid vanilla
  • 1 small box strawberry gelatin
  • 1/2 cups strawberry jam
  • 1 cup whipped cream
  • 1 strawberry , for decoration
  • 1 can evaporated milk
  • salt
  • lime zest
  • 1 lemon

  • Preheat the oven to 180°C.
  • For the crust: Crush the two rolls of cookies using the blender with short pulses. Or place them in a plastic bag and roll a glass over them until completely crushed.
  • Melt the butter.
  • In a mold, place the melted butter and crushed cookies to form a dough, lining the inside of the mold with it (set aside).
  • In a blender, place: eggs, half cream, sweetened condensed milk, evaporated milk, cream cheese, vanilla, lemon juice, and lemon zest, blend until smooth and pour into the crust-lined mold.
  • Bake for 60 minutes at 180°C (set aside). Check constantly with the help of a toothpick to ensure it is cooked well.
  • Prepare the gelatin with half the water, let it cool a bit.
  • Add 1/2 cup of strawberry jam to the gelatin and carefully place it on top of the already baked pie. Refrigerate.
  • Once the gelatin has set, decorate with strawberries and whipped cream.
