If you love pies like I do, I present to you a delicious recipe that I assure you will love; it’s a rich Coconut Pie, perfect to accompany a nice coffee or for a sweet dinner.
In the blender, crumble the leftover sweet bread and María cookies, then make a dough with the butter and about two tablespoons of sugar. Form a base with this dough in the pie mold, then place it in the freezer while preparing the filling.
Filling - In the blender, add the rest of the ingredients until everything is well blended: the eggs, condensed milk, cornstarch, sugar, coconut milk, vanilla, coconut zest, and cream cheese. Pour this filling into the prepared mold with the cookie dough.
Preheat the oven to 350 degrees and bake for 45 minutes, depending on your oven.
Refrigerate for 3 hours and enjoy.
