Light Cheesecake for mom

I made this dessert for my mom's birthday since she has problems with sugar, and I thought it was a good idea to try since a birthday is not complete without a cake.

  • 1 package María cookies, or oatmeal cookies
  • cinnamon, for the base, this is to taste
  • 100 grams margarine, low-fat, melted
  • 3 envelopes unflavored gelatin
  • 500 grams cream cheese, low-fat
  • 3 egg whites
  • 1 tablespoon liquid vanilla
  • 3 tablespoons Splenda, or some sweetener
  • 2 trays strawberry , about half a kilo
  • 250 grams splenda sugar, for decoration
  • dash rum , if desired
  • 2 trays strawberry , about half a kilo
  • butter spray , or butter or margarine; this is to personal taste, I used low-fat spam

  • Preheat the oven to 180 degrees.
  • Grease a removable mold preferably.
  • Crush the cookies and place them in the mold, mix the cinnamon and margarine, making a base, bake it for 10 minutes and set aside.
  • Mix the gelatin with 5 tablespoons of water and heat in a pan over low heat.
  • In another container mix the beaten egg whites, add the dissolved gelatin and beat, then add the cream cheese, vanilla, rum, and sweetener, beat again. After that, place it in a mold and let it cool in the freezer.
  • Decorations: chop or slice the strawberries and place them in a pot along with the water and splenda, simmer with a little rum until the liquid thickens a bit, then blend and let cool.
  • Once the cake is ready and the strawberry sauce is cold, pour it over the cake and decorate with the remaining strawberries.
