Chocolate Topped Cheesecake

  • 600 grams reduced-fat cream cheese
  • 3 eggs
  • 1 cup yogurt, skimmed
  • 2 cups cow's milk
  • 2 cups flour
  • 1 cup artificial sweetener, diabetic sugar
  • 1 envelope dry yeast
  • 100 grams bittersweet chocolate, for the topping
  • 160 grams clotted cream, for the topping
  • 40 grams margarine, for the topping

  • Preheat the oven to 170°C.
  • For the cheesecake, beat all the ingredients together.
  • Pour them into a greased mold (22 cm in diameter) and bake for 40-50 minutes. Let cool.
  • For the topping, heat the cream almost to boiling.
  • Remove from heat and add the chopped chocolate. Stir constantly.
  • When it has dissolved and formed the ganache, add the margarine and continue beating; this will give the topping more shine.
  • When it's lukewarm, pour over the cake and refrigerate.
