Delicious Pineapple Pie

  • 250 grams sugar
  • 250 grams vegetable butter
  • 2 eggs
  • 500 grams flour
  • 1 teaspoon baking powder
  • 1 pineapple, peeled and cut into small pieces

  • Boil the pineapple with 2 cups of water and 250g of sugar until it is soft.
  • Dissolve the cornstarch in a cup of water and add it to the pineapple, stirring with a wooden spatula, being careful not to burn yourself. Let it boil for about 2 minutes and our pineapple filling is ready.
  • Beat the 2 eggs with 250g of sugar and add the butter until fluffy.
  • Add the flour and the teaspoon of baking powder and knead until the dough comes together.
  • Roll out on a floured table and make some tortillas that are rolled onto the rolling pin and placed over the molds. Trim the edges and fill with pineapple. Then cover with another tortilla, brush with beaten egg, score with a knife, and bake at 240ºC for about 20 minutes until golden brown.
