Cold Peach Pie

This delicious Cold Peach Pie is made with a tasty crust; the best part is enjoying it warm right out of the oven with a scoop of Vanilla Ice Cream.

  • 1 kilo peach, in pieces
  • 3/4 cups brown sugar
  • 1 lemon , its juice
  • 1/2 tablespoons vanilla essence
  • 1/2 tablespoons cinnamon powder
  • nutmegs, to taste
  • 1/4 tablespoons salt
  • 4 tablespoons unsalted butter , at room temperature
  • 1 ready to use crust pie
  • 3 peaches, in slices to decorate the top of the pie
  • 2 balls vanilla ice cream

  • For the filling: In a bowl, combine the peaches with the brown sugar, lemon, vanilla, cinnamon, nutmeg, salt, vanilla ice cream, and 4 tablespoons of butter. Place in a food processor and mix lightly, then remove.
  • Place the filling in the cookie crust and top with slices of peach.
  • Preheat the oven to 200 degrees Celsius and bake the pie for 30 minutes.
  • Remove the aluminum foil and sprinkle with a little brown sugar, bake for an additional 30 minutes or until slightly golden.
  • Allow to cool and refrigerate to serve cold.
