3 peaches, in slices to decorate the top of the pie
2 balls vanilla ice cream

For the filling: In a bowl, combine the peaches with the brown sugar, lemon, vanilla, cinnamon, nutmeg, salt, vanilla ice cream, and 4 tablespoons of butter. Place in a food processor and mix lightly, then remove.
Place the filling in the cookie crust and top with slices of peach.
Preheat the oven to 200 degrees Celsius and bake the pie for 30 minutes.
Remove the aluminum foil and sprinkle with a little brown sugar, bake for an additional 30 minutes or until slightly golden.
Allow to cool and refrigerate to serve cold.
