A delicious strawberry and coconut pie, with a super smooth texture for these hot days. Everyone will want a second helping of this delicious cold dessert.
1 1/2 tablespoons unflavored gelatin powder, soaked in 3 tablespoons of cold water and dissolved in a double boiler
100 milliliters whipping cream
3 tablespoons sugar
190 grams cream cheese, (1 bar) at room temperature
250 grams strawberry , washed and disinfected.
400 milliliters whipping cream

150 grams sugar , (divided into 50 grams and 100 grams) plus 3 tablespoons.

Using a scoop, form balls and freeze for 2 hours. Whip the cream until peaks form. In a separate bowl, mix the yogurt with the sugar, gently fold in the whipped cream and the gelatin; freeze for 6 hours.
Mix the María cookies with the butter until a paste forms, cover the bottom of a 23-centimeter removable pie mold with the previous mixture and refrigerate.
Blend the strawberries with 50 g of sugar, strain and set aside.
For the strawberry mousse, in a bowl, whip the cream together with 100 grams of sugar. In another bowl, beat the cream cheese until creamy with 3 tablespoons of sugar, add the blended and strained strawberries to this mixture and continue beating at medium speed for about 1 minute.
Add the gelatin to the cheese and strawberry mixture and continue mixing on low speed. Stop mixing and gently fold in the whipped cream using a spatula. At this point, take our coconut mixture out of the freezer and using a fruit baller, make balls from the coconut mixture (see photo), making as many as the mixture allows.
Assembling the pie, we will place half of the strawberry mousse mixture, distribute the coconut balls evenly throughout the mold without touching the walls, add the rest of the strawberry mousse and refrigerate for 4 hours.
Decorate to taste.
Unmold and serve.
