Lemon Pie (Family Recipe)

Family recipe for making the best lemon pie! It is very simple and quick to make. This dessert is a classic that everyone loves and is perfect for sharing.

  • 100 grams wheat flour
  • 1 egg
  • 1 pinch salt
  • 100 grams unsalted butter
  • 1 can condensed milk
  • 5 lemons, (juice)
  • 2 tablespoons lime zest
  • 1 tablespoon vanilla essence
  • 4 egg yolks
  • 4 egg whites
  • 1 cup sugar

  • For the filling, place in a medium bowl, the condensed milk, juice and zest of lemon, egg yolks, and vanilla. Mix and pour over the crust after removing it from the oven.
  • For the crust, preheat the oven to 200 °C.
  • Cream the butter with a fork (VERY important to use a fork, otherwise it won't have the desired consistency).
  • Add the egg, salt, and flour, continue mixing with the fork.
  • Roll out with a rolling pin and place in the mold (previously greased with butter and a bit of flour to prevent sticking).
  • Prick the dough with a fork to prevent it from puffing up, bake for approximately 10 minutes.
  • For the meringue, beat the egg whites to stiff peaks. Gradually add the sugar and beat for 2 more minutes.
  • Place the meringue over the filling and return to the oven until browned.
