1 cup flour, to roll out
8 egg yolks, For the filling

6 tablespoons cornstarch, For the filling
4 tablespoons butter, melted. For the filling
1/4 cups lime juice
4 egg whites, pasteurized for the French meringue
1 1/2 cups sugar, For the French meringue
1 lime, zest

Preheat the oven to 180°C.
In a mixer, add flour, salt, sugar, butter, and yolk; mix until you have a homogeneous dough.
Place on a non-stick plastic wrap and let cool for 15 minutes.
In a bowl, add the egg yolks, sugar, cornstarch, butter, and lemon juice; beat until combined. Set aside.
On a floured surface, roll out the dough, cut to the size of the pie mold.
Pour the previous preparation over the pie base.
Bake for 40 minutes. Let cool and set aside.
Beat the egg whites with the lemon zest, gradually add the sugar until they double in size and the meringue shines.
Add the meringue on top of the lemon pie, using a torch, pass over the meringue until it gets a golden color.
Let cool and enjoy with a cup of coffee.
