Lemon Pie with French Meringue

This delicious lemon pie is incredible with a crunchy crust, an exquisite lemon filling, and a soft meringue, they are the perfect combination for a great summer.

  • 2 cups flour, For the crust

  • 1 1/2 sticks butter, For the crust
  • 1 egg yolk, For the crust
  • 1 cup flour, to roll out
  • 8 egg yolks, For the filling
  • 1 1/2 cups sugar, For the filling
  • 6 tablespoons cornstarch, For the filling
  • 4 tablespoons butter, melted. For the filling
  • 1/4 cups lime juice
  • 4 egg whites, pasteurized for the French meringue
  • 1 1/2 cups sugar, For the French meringue
  • 1 lime, zest

  • Preheat the oven to 180°C.
  • In a mixer, add flour, salt, sugar, butter, and yolk; mix until you have a homogeneous dough.
  • Place on a non-stick plastic wrap and let cool for 15 minutes.
  • In a bowl, add the egg yolks, sugar, cornstarch, butter, and lemon juice; beat until combined. Set aside.
  • On a floured surface, roll out the dough, cut to the size of the pie mold.
  • Pour the previous preparation over the pie base.
  • Bake for 40 minutes. Let cool and set aside.
  • Beat the egg whites with the lemon zest, gradually add the sugar until they double in size and the meringue shines.
  • Add the meringue on top of the lemon pie, using a torch, pass over the meringue until it gets a golden color.
  • Let cool and enjoy with a cup of coffee.
