The Best Lemon Pie with Meringue

  • 4 egg yolks
  • 1/3 cups cornstarch
  • 1 1/2 cups water
  • 1/4 teaspoons salt
  • 1 1/2 cups sugar
  • 3 tablespoons butter
  • 1/2 cups lime juice
  • 1 tablespoon lime zest
  • 1 pie crust
  • 4 egg whites, (for the meringue)
  • 1 pinch cream of tartar, (for the meringue)
  • 2 tablespoons sugar, (for the meringue)

  • Preheat the oven to 180 degrees Celsius.
  • In a deep bowl, beat the egg yolks.
  • In a pot, mix the cornstarch, water, sugar, and salt with a whisk.
  • Place over medium heat and continue stirring until it boils. Allow to boil for 1 minute.
  • Remove from heat and add the egg yolks, whisking quickly with the whisk to incorporate.
  • Return the mixture to low heat and heat for 1 minute. Remove from heat and add the butter, lemon juice, and zest, mixing well.
  • Pour the filling into the pie crust.
  • Beat the egg whites with the cream of tartar using an electric mixer until stiff peaks form. Add the sugar and beat for a couple more minutes.
  • Place the meringue over the pie filling, covering the entire pie.
  • Bake the pie for 10-12 minutes or until the meringue is golden.
  • Remove the pie from the oven and allow it to cool before serving.
