Transparent Lemon Pie

  • 1 cup almonds
  • 3 cups María cookies, for the base
  • 1/2 cups condensed milk, for the base
  • 1/4 cups evaporated milk, for the base
  • 1/2 teaspoons salt, for the base
  • 1/4 cups lime zest, for the base
  • 1/4 cups butter, cold for the base
  • 4 cups lime soda
  • 1/2 cups lemon juice
  • 1/2 cups unflavored gelatin powder, melted and hydrated
  • 2 cups cream cheese
  • 1/4 cups condensed milk
  • 4 tablespoons lime zest
  • 1/4 cups lime juice
  • 2 limes, sliced, for decoration

  • For the base, place the almonds in your Vitamix® mixing bowl and blend until you obtain a very fine powder. Set aside.
  • Place the Maria cookies, sweetened condensed milk, evaporated milk, salt, zest, butter, and almonds in your Vitamix® and blend until you achieve a consistent mixture.
  • Pour the previous preparation into a 20 cm diameter mold and compact it with a spoon. Refrigerate.
  • For the filling, in a pot, heat the lemon soda with lemon juice and gelatin for about 5 minutes, without boiling. Cool and pour into the cookie base. Refrigerate until set, set aside.
  • For the cream, blend the cream cheese with sweetened condensed milk, lemon zest, and lemon juice in your Vitamix® until you obtain a smooth and thick mixture. Place the mixture in a piping bag with a star tip.
  • Unmold the pie and decorate with the cream, lemon slices, and serve.
