Unique Lemon Charlotte

This Unique Lemon Charlotte is different from all the others, as it has a bit of Maizena that gives a delicious texture to the lemon cream. The preparation of this dessert, despite needing cooking in a pan, is very easy to make. This Unique Lemon Charlotte is a light dessert that you'll love.   • 3/4 cups sugar
  • 1/4 cups Maizena® cornstarch
  • 1 cup water
  • 6 egg yolks
  • 1/2 cups lime juice, strained
  • 2 tablespoons Spring Margarine Chantilly® unsalted
  • 170 grams cookies, sweet without filling
  • 1 lime, sliced

  • Boil the sugar with regular Maizena® Corn Starch and water until completely dissolved.
  • Add 1/2 cup of the previous mixture to the egg yolks while whisking continuously until incorporated.
  • Combine the two mixtures and cook over low heat, stirring constantly until thickened.
  • Add the lemon juice and cook for 1 more minute. Remove from heat.
  • Add unsalted Primavera Chantilly® Margarine and mix until melted, cover the filling with plastic wrap and let cool.
  • In a mold or baking dish, add some of the filling to the base of the mold and cover with a layer of cookies.
  • Cover with another portion of the lemon filling and then another layer of cookies. Continue until all ingredients are used.
  • Refrigerate for at least 2 hours.
  • Garnish with lemon slices and serve.
