Pine Nut and Orange Cookies

Delicious cookies made with pine nuts, orange zest, sugar, and flour.

  • 1 1/2 cups flour
  • 1/2 cups pine nuts
  • 1/4 cups sugar
  • 1/4 tablespoons baking powder
  • 1/4 tablespoons salt
  • 1 teaspoon cinnamon
  • 1/4 cups olive oil
  • 1 egg, batter
  • 1 tablespoon orange zest

  • Preheat the oven to 180 degrees Celsius and position the rack in the upper third of the oven.
  • Toast the pine nuts on a baking sheet for 4-5 minutes (be careful not to burn them).
  • In a deep bowl, mix the flour, sugar, baking powder, orange zest, salt, cinnamon, and pine nuts.
  • In another deep bowl, mix the oil and the egg. Incorporate with the flour mixture and mix with your hands until a dough is formed.
  • In another deep bowl, place 1/4 cup of sugar. Take the dough and with a spoon, separate a tablespoon of dough. With your hands, roll it into a ball and coat it in sugar, then place it on a greased baking sheet. Repeat with the entire dough.
  • Bake for 10 minutes or until the cookies are golden brown. Remove from the oven and allow to cool before removing from the tray.
