  • 1 cup sugar
  • 4 cups masa mix for tamales
  • 1 tablespoon baking powder
  • 1 1/2 cups pineapple juice
  • 2 cups canned pineapple, in cubes
  • Yellow dye
  • 1 cup walnuts, finely chopped

  • Cream the butter with the sugar for 10 minutes or until it is soft and spreadable. Then add the nixtamalized flour, baking powder, pineapple juice, and once the ingredients are combined, incorporate the pineapple, yellow dye, and nuts.
  • Place 2 tablespoons of masa on a tamale leaf, wrap as shown in the video, and repeat the process until the masa is finished.
  • Place the tamales on the rack of a steamer with water and cook the sweet tamales for 1 hour.
