Pineapple Tart

These delicious individual tarts have slices of pineapple brushed with jam.

  • 4 slices pineapple, in syrup
  • 1/2 cups pastry cream
  • 1 cup flour
  • 1/3 cups unsalted butter
  • 1/3 cups sugar
  • 1 egg, slightly beaten
  • 1 lime zest
  • 1 pinch salt
  • 1/4 cups pineapple jam

  • In a large bowl, mix the flour with the butter, sugar, egg, lemon zest, and salt. Mix the dough with your hands until you obtain a pastry dough.
  • Wrap the dough in cling film and refrigerate for 1 hour.
  • Preheat the oven to 200 degrees Celsius.
  • Grease 4 tart molds with a diameter of 10 cm with a little butter.
  • On a clean surface, roll out the dough and cut out circles of 13 cm, cover the tart molds, and prick the edges with a fork.
  • Bake the bases for 15 minutes or until golden brown.
  • Remove the bases from the oven, let them cool, then spread 2 tablespoons of pastry cream over each base, and top with 1 slice of pineapple.
  • Heat the jam in a pot over medium heat until it becomes liquid and brush the tartlets with it. Serve.
