  • 6 egg whites
  • 1/4 cups sugar, for the egg whites
  • 6 egg yolks
  • 1/4 cups sugar, For the egg yolks
  • 1 cup flour
  • 1/4 cups butter, melted
  • 1 tablespoon orange zest
  • icing sugar
  • 2 cups dulce de leche
  • icing sugar, for decoration
  • mixed berries, for decoration

  • Beat the egg whites and sugar in an electric mixer with a whisk attachment until they double in size or reach stiff peaks. Set aside.
  • Beat the egg yolks and sugar at medium speed for 3 minutes or until the color changes.
  • Gently fold the yolks into the egg whites, but try not to mix too much to avoid losing the air. Start adding the flour gradually and mix in.
  • Add the butter and orange zest, mix until homogeneous. Set aside.
  • Pour the mixture onto a baking sheet lined with wax paper and spread with a spatula. Bake at 180 °C for 10 minutes. Unmold the pionono.
  • Place a kitchen towel on a flat surface, add powdered sugar and place the pionono. Remove the wax paper and immediately add another layer of powdered sugar to cover. Begin to roll it up like a taco and let it rest for 10 minutes.
  • Unroll and spread with dulce de leche until covered, then carefully roll it back up to avoid breaking.
  • Place the pionono on a board and decorate with powdered sugar and red fruits.
