Place the puff pastry on a clean floured surface and cut out two squares of 20 cm.
Cover both squares with the egg mixture and sprinkle with 2 tablespoons of the sugar mixture.
Sprinkle pistachio on 1 square leaving a border and cover with the other square, press to seal both squares and cover the top square with butter and the remaining sugar mixture.
Cut into strips 2 cm wide and roll the strips to look like in the photograph. Place them on a greased baking tray.
Bake for 20 minutes at 200 degrees Celsius or until golden brown. Remove from the oven and allow to cool.
