1 egg yolk
8 tablespoons unsalted butter
1/3 cups sugar
1/2 cups whole wheat flour
2 1/2 tablespoons water, fry
1 pinch salt
3 cups plum, ripe
2 cups cream
1 cup goat cheese
4 sprigs fresh thyme
3/4 cups sugar

Dough: Sift the flour with the salt onto a piece of wax paper.
Place the butter and yolk in the processor and blend until the dough is smooth.
Add water and mix again. Add the flour and sugar, and mix in steps until everything is combined.
Transfer to a lightly floured surface and knead gently until smooth.
Wrap in plastic and refrigerate for 30 minutes before rolling out with a rolling pin.
Preheat the oven to 180ºC.
Line the pan with the dough and cover with aluminum and beans.
Blind bake until it starts to brown. Remove the aluminum and beans and bake for 20 more minutes.
Filling: Mix cheese, cream, thyme, and sugar and transfer to the pan. Bake for 20 minutes. Cool.
At the end, add the plums and serve at room temperature.
