Plum and Cheese Tart

A delicious plum and cheese tart that your kids will love.

  • 1 egg yolk
  • 8 tablespoons unsalted butter
  • 1/3 cups sugar
  • 1/2 cups whole wheat flour
  • 2 1/2 tablespoons water, fry
  • 1 pinch salt
  • 3 cups plum, ripe
  • 2 cups cream
  • 1 cup goat cheese
  • 4 sprigs fresh thyme
  • 3/4 cups sugar

  • Dough: Sift the flour with the salt onto a piece of wax paper.
  • Place the butter and yolk in the processor and blend until the dough is smooth.
  • Add water and mix again. Add the flour and sugar, and mix in steps until everything is combined.
  • Transfer to a lightly floured surface and knead gently until smooth.
  • Wrap in plastic and refrigerate for 30 minutes before rolling out with a rolling pin.
  • Preheat the oven to 180ºC.
  • Line the pan with the dough and cover with aluminum and beans.
  • Blind bake until it starts to brown. Remove the aluminum and beans and bake for 20 more minutes.
  • Filling: Mix cheese, cream, thyme, and sugar and transfer to the pan. Bake for 20 minutes. Cool.
  • At the end, add the plums and serve at room temperature.
