Preheat the oven to 180ºC, heat from above and below (I do it with a fan).
In a bowl, combine the oil, beaten eggs, sugar, cinnamon, coffee, nutmeg, grated apple, and gently mix.
Next, sift the flour, baking powder, and salt, and add it to the bowl; finally, incorporate the apple pieces and tablespoons of milk and mix.
Bake for 15-20 minutes, depending on the oven (they will be ready when a toothpick inserted comes out clean). Let cool for 5 minutes in the mold and then transfer to a wire rack to cool completely.
To make the frosting, mix in a bowl the cream cheese, butter, flavoring, milk, and one-third of the powdered sugar and beat until combined; gradually add the remaining sugar and mix until the desired consistency is reached.
Decorate to taste; in this case, I used an open nozzle and garnished with nuts.
