Christmas Cake with Almonds

This Christmas cake with almonds is ideal for taking to all the holiday dinners and gatherings; you can decorate it with a ribbon around the cake to make it look nicer.

  • 2 cups whole-wheat flour
  • 1 1/4 cups oats
  • 1/2 cups cereal All Bran
  • 1 1/2 teaspoons nutmeg powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 2 eggs
  • 1/2 cups brown sugar
  • 1 1/4 cups soy milk
  • 1/2 cups almond oil, (plus a little to grease the pan)
  • 1/2 cups almonds
  • 1 tablespoon white vinegar
  • 2 teaspoons almond extract
  • 1/2 cups blanched almond, (whole)
  • 3/4 cups almonds, (sliced)

  • Preheat the oven to 200°C.
  • Grease the pan with a little corn oil.
  • In a bowl, mix the flour, 1 cup of oats, the cereal, nutmeg, baking powder, baking soda, and salt. Set aside.
  • In another bowl, beat the eggs and sugar with an electric mixer. Add the soy milk, oil, vinegar, and almond extract. Add the dry ingredients and stir until moistened. Fold in the sliced almonds.
  • Pour the mixture into the previously greased pan, sprinkle with the remaining oats, and arrange the whole almonds on top.
  • Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Remove the cake from the oven, unmold, and let cool.
  • Serve.
