2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoons salt
1 cup cranberries
1 egg
60 grams unsalted butter, melted
1 tablespoon orange zest
3/4 cups orange juice
1/4 cups icing sugar
peppermint, to taste for decoration

3 tablespoons icing sugar, for decoration

In a bowl, mix the flour, sugar, baking powder, baking soda, salt, orange zest, and blueberries.
In another bowl, beat the egg, butter, and orange juice.
Add the wet ingredients to the dry ingredients and mix until everything is well incorporated.
Grease a loaf pan and pour in the mixture.
Bake at 180°C for 40 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and let cool for 15 minutes before unmolding.
Sprinkle powdered sugar on top and decorate with blueberries and mint leaves.
