Candied Fruit Cake

This recipe is a much simpler version of Fruit Cake and is just as delicious. Try it if you love dried fruits and this holiday delight.

  • 1 cup whole wheat flour
  • 3/4 cups pancake mix
  • 3 eggs
  • 1/4 kilos unsalted butter
  • 3/4 cups orange juice
  • 1/2 cups candied fruits, soaked in their juice
  • 3/4 cups raw sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon liquid vanilla

  • Preheat the oven to 200°C.
  • Cream the butter and sugar until light and fluffy, add the eggs one by one and then the flours.
  • Once the mixture is combined, add the orange juice along with the fruits, mixing until the mixture is homogeneous; if it feels too dry, you can add milk gradually so that the mixture doesn't become too watery.
  • Pour the mixture into a greased and floured mold and bake for 40 minutes.
  • Bake for 40 minutes. Let cool and decorate with icing or powdered sugar.
