Diet Muffins with All Bran

  • 2 cups cereal All Bran
  • 1 1/2 cups low-fat milk
  • 1 egg
  • 1 tablespoon baking powder, royal
  • 1/2 cups Splenda, or light sugar
  • 3/4 cups whole-wheat flour
  • 1 teaspoon vanilla essence

  • Preheat the oven to 350ºF. Grease 9 muffin tins with PAM for baking (light oil spray).
  • In a bowl, soak the All Bran with milk, egg, and vanilla for 3 minutes.
  • In a food processor, mix the flour, baking powder, and sugar. Add the cereal mixture with milk and egg. Pulse for a few seconds to combine.
  • Pour into the muffin tins and bake for 40 minutes. Remove from the oven and cool on a rack.
