Carrot Banana Granola Bread

  • 1/4 cups Kellogg’S® granola ancestral grains; sunflower seeds, amaranth and raisins
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoons salt
  • 2 bananas
  • 1/2 cups brown sugar
  • 1 egg
  • 1 egg white
  • 1 teaspoon vanilla essence
  • 1 tablespoon coconut oil
  • 1 cup apple purée
  • 1 cup carrot, washed and disinfected
  • 1/3 cups almond milk
  • 1 package cream cheese
  • 1/3 cups icing sugar
  • 1/4 teaspoons cinnamon
  • 1/2 teaspoons vanilla essence

  • Preheat the oven to 180°C (350°F).
  • Mix the flour with the Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, mash the bananas to make a puree and add; brown sugar, egg white and egg, vanilla, and mix until everything is well incorporated.
  • Add the melted coconut oil, apple sauce, and almond milk. Gently fold in the grated carrots. Incorporate the Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, and raisins, and mix until you have a homogeneous batter.
  • Grease a loaf pan and pour in the mixture. Bake at 180°C (350°F) for 40 minutes.
  • Remove from the oven and let cool for 15 minutes, unmold, and set aside.
  • Cream the cream cheese and add the powdered sugar, vanilla, cinnamon, and vanilla. Beat until you have a slightly thick frosting.
  • Frost the bread with the icing, slice, and serve.
