I really enjoy cooking and making desserts is my specialty; one can express so many emotions in the combination of flavors. This recipe was inspired by my family; they motivate me to make my desserts. This cake has a bittersweet flavor; it is simply exquisite.
Jam: wash and disinfect the blackberries, heat them in a pan with sugar for 15 minutes until they release their juice, stirring constantly, let it boil, then strain and reserve the blackberries, return the liquid to the heat for 25 minutes until it becomes frothy, finally combine the blackberries with the foam and let it cook for 15 minutes. Pour into a jar and set aside.
Cheese: let it come to room temperature and then beat with sugar, vanilla, and milk.
Preheat the oven to 180 C.
Cake: separate the egg whites from the yolks, beat the egg whites with the sugar until stiff peaks form and set aside; beat the yolks with the butter, a pinch of salt, and the previously sifted flour with the baking soda, incorporate with the egg whites using gentle folding motions.
Pour half of the mixture into a greased and floured mold, place a layer of jam and cream cheese, cover with the rest of the mixture, and bake for 45 minutes. Five minutes before it’s done, insert a toothpick to check if it’s cooked.
