Delicious Ring Cake

When I was a child, my mother brought this ring cake home, and it was like a delicacy from the gods. When I grew up, I went to find the lady who made them, and I was surprised to learn she had passed away, but her son saw me so desperate that he gave me the recipe. It’s so delicious that just seeing it makes you crave it.

  • 250 Gloria® unsalted butter
  • 3/4 cups sugar
  • 1 can condensed milk
  • 8 egg yolks
  • 8 egg whites
  • 2 cups flour
  • 1 cup rice flour
  • 2 teaspoons baking powder
  • 1 cup pineapple juice
  • 6 tablespoons water
  • 1/4 cups sugar

  • Sift the flour with the baking powder four times.
  • Cream the butter with the sugar until fluffy. Approximately 5 minutes.
  • Add the egg yolks and the condensed milk.
  • Lower the mixer speed to the minimum and gradually add the sifted flour, continue mixing.
  • In another bowl, beat the egg whites until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture.
  • Pour into the previously buttered and floured ring mold.
  • Bake for 40 minutes to 1 hour at 175°C in a preheated oven.
  • Remove the mold from the oven and poke holes in the ring with a toothpick (while still warm).
  • In a pot, over medium-low heat, combine the pineapple juice, 6 tablespoons of water, and 1/4 cup of sugar until a syrup is achieved.
  • Soak the ring with this syrup gradually, using a brush, wait a moment and soak again until all the syrup is used.
  • Let it rest and cool before unmolding.
  • Enjoy. It’s delicious.
