Mango Loaf Cake

Now that it’s mango season, I’m sharing a recipe from my grandmother, a delicious dessert to accompany your afternoon coffee.

  • 2 cups wheat flour
  • 2 teaspoons cinnamon powder
  • 2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1 1/4 cups sugar
  • 2 eggs
  • 3/4 cups Gloria® butter unsalted butter, at room temperature
  • 2 1/2 mangoes, peeled and chopped
  • 1 teaspoon lime juice
  • 1/4 cups raisins

  • Preheat the oven to 180°C, grease two loaf pans, and flour them.
  • Combine the dry ingredients in a bowl. Sift them twice.
  • Beat the eggs and gradually add the butter, then incorporate the flour, mangoes, lemon juice, and raisins.
  • Pour the mixture into the pans and bake for 60 minutes.
