1 cup coconut
1/2 cups Gloria® unsalted butter
1 1/2 cups flour
1/2 teaspoons baking powder
1/2 cups sugar
1/2 cups brown sugar
3 eggs
1 cup canned pineapple
1/4 teaspoons salt
1 teaspoon liquid vanilla
1 cup sour cream
1/2 teaspoons ginger powder

Mix the flour, baking powder, salt, and ginger.
In another bowl, add the sugar and butter; once they change color, incorporate the eggs (one at a time). Add the vanilla extract and continue beating.
Gradually add the dry ingredients to this mixture until well combined.
Fold in the sour cream, pineapple chunks, and shredded coconut. Once everything is well integrated, turn off the mixer.
Pour this mixture into a previously greased and floured mold. Sprinkle coconut on the surface and bake at 180°C for 35 minutes.
