Pineapple and Coconut Cake

A delicious pineapple cake with coconut; this dessert reminds me a lot of the trips my family and I have taken to the beach.

  • 1 cup coconut
  • 1/2 cups Gloria® unsalted butter
  • 1 1/2 cups flour
  • 1/2 teaspoons baking powder
  • 1/2 cups sugar
  • 1/2 cups brown sugar
  • 3 eggs
  • 1 cup canned pineapple
  • 1/4 teaspoons salt
  • 1 teaspoon liquid vanilla
  • 1 cup sour cream
  • 1/2 teaspoons ginger powder

  • Mix the flour, baking powder, salt, and ginger.
  • In another bowl, add the sugar and butter; once they change color, incorporate the eggs (one at a time). Add the vanilla extract and continue beating.
  • Gradually add the dry ingredients to this mixture until well combined.
  • Fold in the sour cream, pineapple chunks, and shredded coconut. Once everything is well integrated, turn off the mixer.
  • Pour this mixture into a previously greased and floured mold. Sprinkle coconut on the surface and bake at 180°C for 35 minutes.
