Italian Sponge Cake

Light and fluffy sponge cake for a cake or to consume without any additions. Uses only four ingredients.

  • 6 eggs
  • 180 grams sugar
  • 180 grams flour
  • 1 tablespoon liquid vanilla

  • Preheat the oven to 180°C.
  • Beat the eggs (whole) with the sugar for 15 minutes until the mixture is aerated.
  • Gradually incorporate the flour by spoonfuls without letting it sink, gently folding and stirring with a spatula.
  • Add the vanilla essence.
  • Bake in the oven for 35 minutes and after turning it off, keep it semi-open to reach room temperature for 10 minutes.
