Muffins, just like sponge cakes, are a classic in pastry and so simple that you won't believe it.

  • 130 grams flour
  • 1 lemon
  • 200 grams sugar
  • 5 eggs
  • 1 teaspoon dry yeast
  • 1/2 glasses sunflower oil

  • Grate the lemon peel.
  • Beat the eggs, gradually adding the sugar and continue beating until the sugar dissolves.
  • Gradually add the flour, baking powder, and lemon zest.
  • Pour in the oil, beating to achieve a homogeneous batter.
  • Let the batter rest for 15 minutes.
  • Preheat the oven to 200 °C.
  • Place 4 muffin molds on a baking tray, pour the batter until it covers 3/4 of the molds, and bake.
