Pineapple Ring Cake

If you are someone who loves desserts, my recipe will be fabulous for you. What better than a delicious pineapple ring cake, decorated with some delicious cherries. Perfect to accompany with a coffee.

  • 200 grams Gloria® unsalted butter
  • 100 grams sugar
  • 8 eggs
  • 1 can condensed milk
  • 100 grams wheat flour
  • 250 grams rice flour
  • 2 tablespoons baking powder
  • 8 egg whites, at the point of nougat
  • 1 can canned pineapple, Reserve the juice for the sauce.
  • 8 cherries
  • 8 couverture chocolate, green color
  • 150 grams sugar
  • 6 tablespoons water
  • 1 liquid ounce rum , (optional)

  • Soften the butter with a mixer until it lightens in color and becomes creamy, then add the sugar and beat very well, gradually incorporating the yolks one by one, followed by the condensed milk.
  • Sift the flours together with the baking powder (3 times), and gradually incorporate them into the butter and sugar mixture.
  • Beat the egg whites to the point of nougat and gently fold them into the previous mixture, grease and flour the mold, and pour in the mixture.
  • Preheat the oven for 10 minutes and bake at 180 degrees C for 40 minutes or until a toothpick comes out clean.
  • As soon as the cake is removed from the oven, flip it over.
  • With the juice from the can of pineapple, 150 gr. of sugar, 6 tablespoons of water, and a shot of rum, bring to a boil for 7-10 minutes to make the syrup, and soak the cake.
  • Decorate to taste with pineapple, cherries, green chocolate. (The chocolate is melted for 40 seconds in intervals of 10 seconds each, and placed in a piping bag to make little horns).
