  • 3/4 teaspoons salt
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 2 teaspoons lime zest
  • 1/2 teaspoons cardamom

  • 1 teaspoon vanilla essence
  • 1/2 cups olive oil
  • 2 eggs
  • 2 cups icing sugar
  • 1 lime, (juice)
  • butter, to grease the mold

  • Preheat the oven to 180°. Grease and flour a loaf pan.
  • In a bowl, mix the flour, baking powder, cardamom, and salt.
  • Mix the sugar with the lemon zest, FAGE Total 0% Greek Yoghurt, olive oil, eggs, and vanilla extract using a whisk until all ingredients are combined.
  • Fold the ingredients with a spatula until combined.
  • Pour the mixture into the mold and smooth the surface with a spatula. Place the mold in the center of the oven until the cake is golden on top and a toothpick inserted in the center comes out clean, about 50 minutes.
  • Let the cake cool for 20 minutes and run a knife around the edges, then invert it onto a rack and wait for it to cool completely.
  • In a bowl, mix the powdered sugar with the lemon juice, adding the juice drop by drop and mixing until the desired consistency is achieved.
  • Pour the frosting over the cake and let it harden before serving.
