Mix the sugar with the lemon zest, yogurt, olive oil, eggs, and vanilla extract with a whisk until all ingredients are combined.
Fold the ingredients with a spatula until they are combined.
Pour the mixture into the pan and smooth the surface with a spatula. Place the pan in the center of the oven until the cake is golden on top and a toothpick inserted in the center comes out clean, about 50 minutes.
Let the cake cool for 20 minutes and run a knife around the edges, invert it onto a rack, and wait for it to cool completely.
In a bowl, mix the powdered sugar with the lemon juice, adding the juice drop by drop and mixing until you reach the desired consistency.
Pour the frosting over the cake and let it set before serving.
