Yogurt and Lemon Cake

A delicious cake to make at home and treat the whole family. This cake has yogurt and olive oil which gives it an extraordinary flavor.

  • 1 1/2 cups flour
  • 3/4 teaspoons salt
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 2 teaspoons lime zest
  • 1/2 teaspoons cardamom
  • 1/2 cups yogurt
  • 1 teaspoon liquid vanilla
  • 1/2 cups olive oil
  • 2 eggs
  • 2 cups powdered sugar
  • 1 lemon , the juice
  • unsalted butter , to grease the pan

  • Preheat the oven to 180°. Grease and flour a loaf pan.
  • Mix the flour, baking powder, cardamom, and salt in a bowl.
  • Mix the sugar with the lemon zest, yogurt, olive oil, eggs, and vanilla extract with a whisk until all ingredients are combined.
  • Fold the ingredients with a spatula until they are combined.
  • Pour the mixture into the pan and smooth the surface with a spatula. Place the pan in the center of the oven until the cake is golden on top and a toothpick inserted in the center comes out clean, about 50 minutes.
  • Let the cake cool for 20 minutes and run a knife around the edges, invert it onto a rack, and wait for it to cool completely.
  • In a bowl, mix the powdered sugar with the lemon juice, adding the juice drop by drop and mixing until you reach the desired consistency.
  • Pour the frosting over the cake and let it set before serving.
