Zucchini Bread

Delicious zucchini bread, this recipe can be made for a snack, side dish, or dessert; it is delicious. I love preparing it because it has a very rich flavor.

  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 1/2 cups vegetable oil
  • 1 cup flour, sifted
  • 1 pinch salt
  • 1 teaspoon baking soda, sifted
  • 1/2 teaspoons baking powder, sifted
  • 1 teaspoon cinnamon
  • 2 cups zucchini, grated

  • Preheat the oven to 200ºC.
  • Flour the loaf pan and set aside.
  • Beat the eggs, add the sugar and vanilla.
  • Continue beating until it takes on a pale yellow color and gradually add the oil.
  • Mix all the dry ingredients, incorporate the egg mixture, and grate the zucchini and fold it in.
  • Pour the mixture into the mold and bake for 1 hour.
