1 teaspoon vanilla essence
1/2 cups vegetable oil
1 cup flour, sifted
1 pinch salt
1 teaspoon baking soda, sifted
1/2 teaspoons baking powder, sifted
1 teaspoon cinnamon
2 cups zucchini, grated

Preheat the oven to 200ºC.
Flour the loaf pan and set aside.
Beat the eggs, add the sugar and vanilla.
Continue beating until it takes on a pale yellow color and gradually add the oil.
Mix all the dry ingredients, incorporate the egg mixture, and grate the zucchini and fold it in.
Pour the mixture into the mold and bake for 1 hour.
