  • 500 vegetable shortening
  • 500 grams sugar
  • 800 self-rising wheat flour, sifted
  • icing sugar
  • 1/4 pinches baking soda

  • Place all the vegetable shortening in a bowl and gradually add the sugar, preferably beating with a mixer until the mixture is creamy and the sugar granules are not very noticeable.
  • Sift in another bowl, the self-raising flour or if you don't have it, all-purpose flour and the baking soda or baking powder and mix them.
  • Pour the previous mixture into the whipped butter with the sugar. At this point, proceed to knead the ingredients. As you incorporate the flour, it may seem like it’s never going to come together, but with continuous kneading, the ingredients will combine. You can knead directly in the bowl or on a table with a rolling pin.
  • Knead until you obtain a compact and smooth dough that does not stick to the bowl, the table, or your fingers. Let it rest for about 10 minutes. Roll it out to about 2 cm thick and cut with a cookie cutter or make small balls and then flatten them like arepitas depending on the size you wish to make.
  • Preheat the oven to approximately 180° and grease and flour a baking tray for cookies, placing them not too close together to avoid sticking. Leave in the oven for 15 minutes or until slightly golden.
  • Finally, upon removing the tray from the oven, sprinkle powdered or granulated sugar on top and let cool before removing them from the tray.
